Ventura Utah Celery seeds produce one of the most reliable and productive celery varieties available to home gardeners. This classic open-pollinated celery forms tall, upright plants with thick, deeply ridged green stalks that are notably crisp and full-flavored. The stalks are broad at the base, tightly bunched, and pale yellow-green at the heart — a sign of natural blanching that brings a mild, sweet depth to the familiar celery flavor. Compared to thin-stalked supermarket varieties, Ventura Utah delivers real substance: stalks sturdy enough to hold up in cooking and tender enough to enjoy raw.
Ventura Utah Celery reaches maturity in approximately 80 to 90 days from transplant, making it a long-season crop that rewards patient planning. Celery is one of the more demanding vegetables in the garden — it thrives in full sun to partial shade, needs consistently moist, fertile soil rich in organic matter, and grows best in cool conditions with temperatures between 60°F and 70°F (15°C to 21°C).
Start seeds indoors 10 to 12 weeks before your last frost date. Seeds require light to germinate — press them gently onto the soil surface and keep the tray consistently moist. Germination typically takes 14 to 21 days. Transplant seedlings outdoors after all frost risk has passed, spacing plants 8 to 10 inches apart in rows 18 to 24 inches apart. A rich, well-amended bed with compost worked in deeply will support the heavy feeding this crop requires. Regular, deep watering is essential — celery does not tolerate drought and will become bitter or bolt if stressed. Side-dress with a balanced organic fertilizer at planting and again mid-season.
For paler, more tender inner stalks, loosely mound soil around the base of plants or wrap them with cardboard a few weeks before harvest — this traditional blanching technique reduces bitterness and softens the flavor.
Harvest when stalks are 12 to 18 inches tall and the base is firm and dense. Cut the entire head at the base, or harvest outer stalks individually to extend your picking window. Flavor is best in cool weather — fall-harvested celery is noticeably sweeter than summer-stressed plants.
Ventura Utah's thick, crunchy stalks are excellent eaten fresh with dips, chopped into salads, or used in soups, stews, stocks, and braises where their robust flavor holds up to long cooking. The leaves are fully edible and intensely flavored — dry them and use as an herb or add fresh to stocks. Freshly harvested celery keeps well in the refrigerator for up to two weeks when wrapped in a damp cloth or stored in a sealed container.
