Spaghetti Squash seeds produce a uniquely textured winter squash variety unlike any other in the garden. When raw, the pale yellow, oval fruits look much like any other squash — but once roasted or baked, the cream-colored flesh separates into long, tender strands that genuinely resemble spaghetti. Fruits typically weigh 4 to 8 pounds and develop a golden-yellow skin at full maturity, signaling they're ready for harvest. This variety has earned a permanent place in kitchens for its ability to stand in for pasta while delivering a mild, slightly sweet, buttery flavor of its own.
Spaghetti Squash is a warm-season annual that thrives in full sun — at least 6 to 8 hours of direct sunlight daily. Direct sow seeds outdoors after all frost danger has passed and soil temperature reaches 60°F or warmer, or start seeds indoors 3 to 4 weeks before your last expected frost date. Sow seeds 1 inch deep in rich, well-draining soil with a pH of 6.0 to 6.8. For hill planting, space hills 4 to 6 feet apart, with 2 to 3 seeds per hill, thinning to the strongest plant once seedlings establish. For row planting, space plants 24 to 36 inches apart in rows 6 feet apart to allow the sprawling vines plenty of room. Days to maturity range from 80 to 100 days from transplant. Keep soil consistently moist during fruit development and apply a balanced organic fertilizer when vines begin to run. This variety is suitable for beginner to intermediate gardeners and is a reliable producer in most temperate climates.
Harvest when the skin has turned a deep, uniform golden yellow and resists puncture from a fingernail — a green or pale skin indicates the fruit needs more time on the vine. Cut the stem with 2 to 3 inches remaining on the fruit to extend storage life. Properly cured in a warm, dry spot for one to two weeks after harvest, Spaghetti Squash stores exceptionally well — often up to 3 months in a cool, dry location. To prepare, halve the squash lengthwise, remove the seeds, brush with olive oil, and roast cut-side down at 400°F for 35 to 45 minutes. Once cooked, a fork rakes the flesh into delicate, noodle-like strands ideal for topping with marinara, pesto, brown butter, or roasted vegetables. The flavor is mild and subtly sweet, making it a versatile base that pairs well with bold sauces and fresh herbs alike. The seeds themselves can be toasted with salt and olive oil as a nutritious snack.
