Royal Burgundy seeds produce a bush bean unlike any other in the garden — the pods emerge a rich, deep purple that makes spotting beans among the foliage effortless. This open-pollinated variety is prized for its striking color at harvest and its notably tender, stringless pods with a sweet, slightly earthy flavor that rivals the best green beans on the market. A reliable performer that matures quickly, Royal Burgundy is well-suited to gardeners of all experience levels.
Royal Burgundy bush beans reach maturity in approximately 50 to 55 days from direct sowing, making them one of the faster bean crops you can grow. Sow seeds directly in the garden after the last frost date, when soil temperatures have reached at least 60°F (15°C) — bush beans do not transplant well and should always be direct-seeded. Choose a location with full sun (6 to 8 hours daily) and well-draining soil amended with compost. Sow seeds 1 to 2 inches deep, spaced 4 to 6 inches apart in rows 18 inches apart. Thin seedlings if needed to maintain good airflow. One of the practical advantages of Royal Burgundy is its cold soil tolerance — the purple-podded genetics allow it to germinate more reliably in cooler spring conditions than most green bean varieties. Succession planting every two to three weeks extends the harvest through summer. No staking or support is required.
Begin harvesting when pods are 4 to 6 inches long and still firm — at this stage they are tender, stringless, and at their flavor peak. Pick every two to three days to keep plants productive; leaving pods on the plant too long redirects energy away from new flower and pod development. The vivid purple color makes visual harvesting straightforward, reducing the missed beans common with green varieties hidden in dense foliage.
In the kitchen, Royal Burgundy is a versatile performer. The pods turn a classic bright green when cooked — a charming transformation that surprises first-time growers — while retaining their tender texture and sweet flavor. Enjoy them steamed, sautéed, roasted, or raw in salads. Their crisp texture holds well in stir-fries and pickles. Store freshly picked beans unwashed in a sealed bag in the refrigerator for up to five days, or blanch and freeze for longer-term storage.
Royal Burgundy is a practical, productive bush bean that earns its place in any kitchen garden through consistent yields, easy harvesting, and genuine eating quality.
