Named for its deeply lobed, ruffled leaves that closely resemble the shape of an oak leaf, this variety forms a loose, open rosette in rich burgundy-red with contrasting green centers. Beyond its ornamental appeal, Red Oak leaf is prized for its tender texture and mild, slightly sweet flavor with none of the bitterness common in some red lettuces. It matures quickly, making it one of the most rewarding greens to grow across multiple seasons.
Red Oak leaf lettuce reaches baby leaf stage in 28–35 days and full rosette maturity in 45–55 days. It thrives in full sun to partial shade — in warmer climates, afternoon shade will extend the harvest window and reduce bolting. Direct sow seeds ¼ inch deep in well-draining, moisture-retentive soil with a pH of 6.0–7.0. For full heads, thin seedlings to 8–10 inches apart; for a cut-and-come-again baby leaf patch, broadcast seed and thin lightly to 2–3 inches. Lettuce is a cool-season crop — sow outdoors 2–4 weeks before the last frost in spring, or in late summer for a fall harvest. Succession sow every 2–3 weeks for a continuous supply. Consistent moisture is key; uneven watering encourages premature bolting. Difficulty level: easy, suitable for beginners and container gardens alike.
Begin harvesting outer leaves once the plant reaches 4–6 inches tall, leaving the central growing point intact to encourage regrowth — a single plant can yield multiple harvests over several weeks. For full heads, cut at the base when the rosette is well-formed but before a central stalk begins to elongate. Red Oak leaf is best enjoyed fresh: its tender, thin leaves wilt quickly with heat, making it ideal for salads, wraps, and garnishes rather than cooked applications. The mild, buttery flavor pairs well with sharp cheeses, toasted nuts, citrus vinaigrettes, and fresh herbs. For storage, loosely wrap unwashed leaves in a damp cloth or paper towel and refrigerate for up to 5 days. The deep red color holds well after washing, making it a standout in mixed salad blends.
