Evergreen Bunching Onion seeds produce a reliable, non-bulbing perennial bunching onion prized for its crisp, slender green stalks and bright white shafts. Unlike standard bulbing onions, Evergreen forms tightly clustered clumps that regenerate season after season, making it one of the most productive and low-maintenance alliums a home gardener can grow. The flavour is mild, clean, and slightly sweet — far more delicate than a mature bulb onion — with tender green tops that remain palatable even as the plant matures.
Evergreen Bunching Onion reaches harvest size in approximately 65 to 120 days from seed, depending on season and conditions. It thrives in full sun (at least 6 hours per day) but tolerates light partial shade without significant loss of quality. Sow seeds directly in well-drained, fertile soil with a pH between 6.0 and 7.0, or start indoors 8 to 10 weeks before your last frost date for an early season advantage. Plant seeds 6 mm (¼ inch) deep, thinning seedlings to 5 to 10 cm (2 to 4 inches) apart in rows spaced 30 cm (12 inches) apart. For continuous harvest, sow successionally every 3 to 4 weeks through spring and again in late summer for autumn production. Evergreen is notably cold-hardy and overwinters reliably in most temperate climates, often remaining green under light frost and re-sprouting vigorously each spring. It is well suited to container growing and integrates beautifully into permaculture polyculture beds alongside herbs and leafy greens.
Harvest individual stalks by cutting them at soil level once they reach 30 to 45 cm (12 to 18 inches) tall, or pull entire clumps and divide them to replant — this is what gives Evergreen its cut-and-come-again character. New growth emerges quickly from the remaining root mass, offering multiple harvests from a single planting. The white shafts are firm and juicy, ideal for slicing raw into salads, grain bowls, and dressings, while the green tops soften beautifully when stirred into soups, stir-fries, eggs, and noodle dishes. Both parts are edible and interchangeable with scallions or spring onions in any recipe. For short-term storage, wrap unwashed stalks in a damp cloth and refrigerate for up to one week. For best flavour, harvest in the morning when sugars are highest.
