Dragon's Tongue Bean seeds produce one of the most visually striking bush beans in the heirloom garden — broad, waxy yellow pods splashed with vivid violet-purple streaks that make harvest time genuinely striking. This Dutch heirloom wax bean is prized not just for its bold appearance but for its exceptional eating quality: pods are tender, crisp, and richly flavored with a buttery sweetness that sets it apart from standard yellow wax varieties. It matures quickly and produces generous flushes of pods on compact, easy-to-manage plants.
Dragon's Tongue is a bush bean that reaches maturity in approximately 55 to 60 days from direct sowing — no staking or trellising required. Sow seeds directly in the garden after all frost has passed and soil has warmed to at least 60°F (16°C); beans do not transplant well. Plant seeds 1 inch deep and space them 4 to 6 inches apart in rows set 18 inches apart. For a continuous harvest, sow successive batches every 2 to 3 weeks through midsummer.
Choose a spot with full sun (6 or more hours daily). Dragon's Tongue performs best in well-drained, moderately fertile soil with a pH of 6.0 to 6.8. Avoid overwatering and overhead irrigation where possible, as consistently wet foliage can encourage fungal issues. This variety is well-suited to beginner and experienced gardeners alike — it is forgiving, fast, and reliable in a wide range of climates.
Pick pods when they are 4 to 6 inches long and still firm — this is when flavor and texture are at their peak. Frequent harvesting encourages the plant to keep producing. One notable characteristic: the striking purple streaks fade to solid yellow when cooked, so if you want to showcase the color, serve pods raw or lightly pickled.
Raw, Dragon's Tongue pods are crisp and mildly sweet, making them excellent for crudité platters, fresh salads, or quick pickling. When cooked — lightly steamed, sautéed in butter, or briefly blanched — the flesh turns tender and silky with a rich, full bean flavor. They hold their shape well and pair beautifully with fresh herbs, lemon, and garlic.
For storage, unwashed pods keep well in the refrigerator for up to one week. For longer preservation, blanch and freeze, or pickle in a light brine with dill and mustard seed.
